My Famous Burger

Literally, this is so good and easy and quick and yummy and writing this now, I want to make them!

DISCLAIMER: ‘why isn’t there a finished picture of the burger?’ ‘What are you hiding?’

…..So you know when something is too good and you eat it before you even manage to take a photo……

 

Ingredients:

1 large white onion – diced

1 medium red onion – diced

2 cloves of Garlic – crushed

2 tablespoons of coconut oil

1 large bag of spinach

1 tin of mixed beans – (I usually use the Napolina 5 bean salad tin….or use the Heinz veg chilli beanz)

1 cup of Rice crisps/pops (obviously gluten free)

1/2 cup of gram flour

seasonings of choice (to taste)

Method:

Fry off the onions in the coconut oil and add the garlic and seasoning.

In a food processor or using a fork or potato masher, mash all the beans to make a sort of puree paste consistency.

Add the bean paste into the onions and cook for around 10 mins.

Turn the heat off and add the spinach leaving it the pan will the lid on for 10 mins.

Preheat your oven in the mean time for 180C (fan).

 

Here is where you kind of get a choice on how you want your burger to be. I’ve made it both ways and it really depends on whether you want crunch inside the burger as well as on the top, or only on the outside.

In a bowl or plastic bag, crush the rice cereal to make large breadcrumbs.

Either

Add them into the pan, stir and make little balls in your hands and put onto baking tray.

OR

Add the gram flour into the pan and stir well.

Scoop out the mixture from the pan into your hand to make burger shapes.

Then in a flat plate roll the burger around in the rice cereal crumb before placing onto a baking tray.

 

Before they go into the oven for 20 mins, drizzle very lightly on top some olive oil.

 

Serve hot with variety of salad, sauce and maybe even a slice of vegan cheese!
