Mini Marshmallow?

My intention when making these was to make macaroons or meringue…like most of the time, the thing I plan on making ends up having a transformation of some sort.

This method is a bit odd to explain;

Using Orgran Egg Replacer powder, I followed the instructions for measurements for 3 eggs and whisked with an electric whisk, added some vanilla extract and 1/2 cup of icing sugar till stiff peaks formed.

I then piped them with a piping bag onto a baking tray lined with parchment and baked in a 180C oven for 20 mins – or until you can touch it and not have your finger go straight through it.

I then cooled them on a cooling rack and dusted with icing sugar and some melted dark chocolate.
