Vegan Frittata

Ingredients:

3 tbs of olive oil

1 large red onion

3 cloves of garlic

1 tsp smoked paprika

1 tsp chilli powder

1/2 tsp salt

1 mixed veg bag: broccoli and cauliflower

2 large handfuls of spinach

Batter:

1 1/2 cups of gram flour

1 1/2 cups of water

1/4 vegan plain yogurt

1/2 tsp Turmeric

1/4 tsp masala

1/2 tsp salt

1/2 tsp black pepper

Garnish: 

Small handful of Pine nuts

1 sliced tomato

Method:

  1. Preheat the oven to 180 degrees (fan) and grease a baking dish (30cm diameter)
  2. Lightly fry the sliced onion with the garlic and add the spices.
  3. Then add the veg and let them soften slightly
  4. In a large mixing bowl whisk together the batter ingredients – for a lighter frittata, use 1 cup of gram flour.
  5. Add the veg to the dish and pour the batter on top – with a fork or knife swirl the batter to combine with the vegetables.
  6. Smooth the top and garnish with the tomato and pine nuts.
  7. Bake for 25 mins – use the knife trick – if it comes out clean after poking it then it’s done!
