With the seasons changing so quickly, something that never gets old is some nice warm soup.
Ingredients:
1 Turnip
4 Carrots
1/2 Butternut Squash (or the soup bag I brought)
1 Onion
2 Parsnips
2 Stock cubes
Salt and pepper
Method:
- Cut or dice all the vegetables
- In a small bit of oil sauté the onions and add the stock cube
- Add the vegetables
- Add 1 pint of water and boil then simmer for 30 mins (or until vegetables are soft)
- Serve warm with bread.
Seriously is the easiest vegetable soup to ever make, you can make it your own by adding different vegetables.
Note: The vegetables I chose, all cook in similar times hence they boiled all together, if you’re going to add leek or garden peas – make sure you add them later on so they do not turn mushy or even dissolve into the liquid.
