Soup. Soup. Soup.

With the seasons changing so quickly, something that never gets old is some nice warm soup.

Ingredients: 

1 Turnip

4 Carrots

1/2 Butternut Squash (or the soup bag I brought)

1 Onion

2 Parsnips

2 Stock cubes

Salt and pepper

Method: 

  1. Cut or dice all the vegetables
  2. In a small bit of oil sauté the onions and add the stock cube
  3. Add the vegetables
  4. Add 1 pint of water and boil then simmer for 30 mins (or until vegetables are soft)
  5. Serve warm with bread.

 

Seriously is the easiest vegetable soup to ever make, you can make it your own by adding different vegetables.

Note: The vegetables I chose, all cook in similar times hence they boiled all together, if you’re going to add leek or garden peas – make sure you add them later on so they do not turn mushy or even dissolve into the liquid.
