Non-Meatloaf

Funny title, but I really don’t know what to call this….so here is my Non-Meatloaf.

Ingredients:

1 can of Chickpeas

2 cups of Spinach

1/2 cup of Macadamia Nuts

2 Red Onions

1 White Onion

1 Carrot

1 Clove of Garlic

Olive Oil

Method:

  1. Saute the sliced onions in some oil
  2. Boil the carrots and mash
  3. Add the mashed carrots to the onions
  4. Blitz the chickpeas with a little oil and then add them to the onions and carrots
  5. Add in the macadamia nuts and spinach
  6. Spread into a tray and cook for 20 minutes
